Today's salad is a suggestion from BTWG standout, Alison Cole, "Mexican Salad". This is one that you can vary and get all kinda crazy with it, if you want. Thanks for the suggestion, Alison.

Mexican Salad

4 cups lettuce (romaine, green leaf, maybe a little spinach)
tomatoes, carrot sticks, black olives, corn from a corn on the cob, (maybe green peppers, red peppers, yellow, onions)
1/2 c black beans (100 cal)
4 oz chicken
2 tbsp cheese
Greek Corn Chips on top

And the Dressing....greek yogurt, salsa and guacamole. I measure the yogurt and avocado, (Tbsp or two per topping) but the salsa is free food ...

I make one like that, too. Try adding jicama to it - it's super crunchy!

I love the 30 salads in 30 days! I eat a salad every day. Never get tired of it.
